Cheese Whipped Potatoes

Ingredients:

4 good sized potatoes
a BUNCH of mozzarella cheese (truly, tons)
1/4 cup milk
1/2 can chicken broth (optional)
garlic salt to taste
1 – 1 1/2 tablespoons butter

Directions:

Do not peel potatoes

Clean and cut potatoes into small chunks, and put into pot of cold water

Boil on medium-high heat until potato chunks are soft in the middle

Drain potatoes and put back into pot

Pour in butter, milk and chicken broth

Blend well with a hand mixer

Pour in some mozzarella cheese and mix again. Repeat two or three times until all cheese is mixed in very well

Add garlic salt to taste

Return pot to stove and re-heat on low/keep-warm, stirring occasionally, until all cheese is well melted and potatoes are thoroughly soft

Green Bean Casserole

My Thanksgiving green bean casserole

2 cans cut or french green beans
1 can mushroom soup with garlic and herbs (Campbells)
1/2 – 1 cup garlic alfredo sauce (use instead of milk)
1/2 onion, chopped
1/2 can small mushrooms (optional)
2 or 3 strips of bacon
1 cup breadcrumbs
a bunch of shredded mozzarella
1 can french fried onions
butter

Preheat oven to 350

Saute onions with butter, mushrooms and bacon (chopped)

Drain green beans and pour into a greased glass casserole dish

Mix in mushroom soup and alfredo sauce (to taste)

Mix in saute mix

In a separate bowl, combine bread crumbs with mozzarella cheese. Mix well, and pour over top of green beans (do not mix with beans)

Bake uncovered for 20 – 25 minutes

Top with french fried onions and bake 5 more minutes or until onions are crunchy
