Cheese Whipped Potatoes

Ingredients:

4 good sized potatoes
a BUNCH of mozzarella cheese (truly, tons)
1/4 cup milk
1/2 can chicken broth (optional)
garlic salt to taste
1 – 1 1/2 tablespoons butter

Directions:

Do not peel potatoes

Clean and cut potatoes into small chunks, and put into pot of cold water

Boil on medium-high heat until potato chunks are soft in the middle

Drain potatoes and put back into pot

Pour in butter, milk and chicken broth

Blend well with a hand mixer

Pour in some mozzarella cheese and mix again. Repeat two or three times until all cheese is mixed in very well

Add garlic salt to taste

Return pot to stove and re-heat on low/keep-warm, stirring occasionally, until all cheese is well melted and potatoes are thoroughly soft
